Lime Mousse Cake

2 cups Graham Cracker Crumbs

1/2 cup Melted Butter

1/4 cup Sugar


6 tbsp Lime Juice

1/4 oz. Unflavoured Gelatin

2 1/2 cups Thickened Cream

10 White Chocolate, Chopped

230 g Cream cheese, Softened

1 cup Sugar

1 1/2 tbsp Lime Zest

1Stir together all of the ingredients. Press firmly into the bottom and sides of the Spring-form Pan (10 inch Recommended) After the crust has been pressed into shape refrigerate until its time to add filling.


1In a small bowl, Stir together the lime juice and gelatin; Let stand for 5 minutes or until it has softened. Whilst Gelatin is softening cook 1/2 cup of cream and white chocolate in a small saucepan until the mixture is melted and smooth. Stir in the gelatin mixture until dissolved and allow it to cool completely. In a large bowl beat cream cheese, sugar and lime zest with a mixer at a low speed until combined. In another large bowl, Beat Remaining 2 cups of cream with a mixer at high speed until soft peaks form. Once the white chocolate mixture has cooled completely gently fold the whipped cream into the white chocolate mixture, and pour into the prepared crust. Cover and freeze for 8 hours.

Garnishing and Preparation for Plating

1Once removed from freezer, Gently run a knife around the edges of the pan to release crust from sides of pan. Garnish with white chocolate curls and lime wedges however you desire. Tip: when garnishing with wedges of lime dip knife in hot water and dry between cuts
